Anyone an amazing vegetarian/vegan cook? Any suggestions for what’s for dinner?

Never too late to a good party that is still going!!

I tried fresh riced califlower with earth balance and spices as a side dish. It turned out good.

I baked some precut sweet potatoes my bf had left in the freezer with some olive oil and spices. Again it was good.

I am also making some simple rice noodles this week once I get some pad thai spice I ordered from pc that I like.

I made some fresh gluten free pasta one night that I found as a new product at my local Aldi with red sauce. I admit I missed the Parmesan (am working on eating less dairy).

It’s a work in progress but am enjoying the ideas. Thanks!!

Hi Shehawk,

My favourite comfort food which also happens to be very healthy and easy is to make brown rice or quinoa and six minutes before it finishes cooking add kale, broccoli, or other greens to the pot to steam and then add a can of rinsed beans (pinto or blackeyed peas are my favourite)to heat up. When done mix together with sesame oil and plum vinegar to taste. ABSOLUTELY DELICIOUS!😋 (Eden Plum vinegar is great!)

I love my vegan diet. ❤️

Plum vinegar sounds good!

I realized I need to order a few staples like brown sugar and some soy sauce. So I will add plum vinegar to the list!
