iPhone tips needed

I sometimes have access to his phone (shower time mostly). I have access to the apple id/PW. It is a work phone, not government but he's told me many times that tampering with the device is illegal because for work he has access to financial info of others. Innocently I clicked on an app (looked like google) but when it opened it was an incognito browser window. I asked him (WTF) why it was incognito, he of course had no idea. Need to know if he is using the private browser or anything else- years ago (and many phone upgrades ago) I installed a keylogger but now I'm scared and less tech savvy. He is tech expert and I've let him handle all the things - so no auto icloud backup on any of our devices. He spends hours on iPad every night - playing cards and other tactical games while watching TV - claims it's not interactive with others. I've been trusting but lately my gut is screaming at me. Appreciate all advice. Haven't been here in a while.
